Super Soup! Healthy Eating!

Ingredients:

  • 1/2 onion - chopped
  • 2 cloves of garlic - Fresh minced
  • 1 small package of mushrooms
  • 3 large carrots, peeled and sliced
  • 2 teaspoon Italian seasoning
  • salt, pepper, cilantro to taste
  • 1 box of low-sodium chicken broth
  • 1 large can of tomato soup
  • 1 can of diced tomato
  • 1 zucchini, sliced in rounds and quartered
  • 1 yellow squash, sliced in rounds and cut in half.
  • 2 cups of chopped fresh green beans
  • 1 can kidney or pinto beans, drained
  • 3 cups purple cabbage, chopped

Directions

Use a large pot and set to it cook on low to medium heat. Add a small amount of olive oil. Sauté the onion, garlic, mushrooms and carrots with the seasonings, until they begin to get soft, about 10 minutes.

Add the tomato soup, chicken broth, and all of the other ingredients to the pot.

Simmer on low heat, covered with a lid, until vegetables are tender, for about 2 hours.
