Use a large pot and set to it cook on low to medium heat. Add a small amount of olive oil. Sauté the onion, garlic, mushrooms and carrots with the seasonings, until they begin to get soft, about 10 minutes.
Add the tomato soup, chicken broth, and all of the other ingredients to the pot.
Simmer on low heat, covered with a lid, until vegetables are tender, for about 2 hours.
